How much trans fluid do you loose when you swap out the CV axles?

I havent done it, but I'm going to guess all of it since you are making a 1.5 inch hole in whats almost the lowest point of the tranny case.

If you jack up one side at a time you shouldn't loose any fluid at all (on a 5 speed not sure about the auto) and if the car is level very little if any. I just removed my transmission yesterday and it didn't spill a drop when I pulled the shafts out.

If it's a getrag, you will lose virtually nothing if it is jacked up level on both sides and not over filled.

you lose enough to need to put some more back in, I have the isuzu 5speed tranny and I changed my cv axles and put 2new cv/tranny seals in. and mine atleast only took the gm syncromesh tranny fluid and it was like 12bucks a qt. from my chevy dealer I needed 2 to fill er up.
