how easy is it to convert from an auto to a manual

i have an automatic cavalier right now, which is fast as all hell, and keeps up well with most modified civics and other forgien cars. however, before i build the engine, i want to maximize my power by putting a stick shift in my car.

i cant find any jackson racing automatic trannies or similiar, so i was wondering 2 things:

are there any sites or companies that make performance tranny internals for auto trannies?

or...how easy is it to convert the interior to a stick, along with a new tranny?

What do you call fast? I certianly hope its not 15-16 seconds in the 1/4 mile.
