isnt a 'valve job' just putting different springs behind the valves??? or is that just a part of it?

NO!

The "valve body" is basically the mechanical computer that runs the trans. It consists of many different piston/valves that get moved by oil pressure and springs to regulate pressures inside the trans and move components (apply clutches, connect gears) inside the trans.

Pre-1990 this was 100% mechanical and the only way to change the way trans would shift... to basically reprogram the computer... was to make changes to the valves, springs, and orifices in the valve body.

This doesn't really apply to an electrically controlled trans though. Some changes can be made to raise pressures and engage clutches harder, but most of it can be changed easier by changing the program in the PCM.
In some cases, changes made to the valve body will actually be "learned out" by the adaptive capabilties of the pcm.
