The GT350's and 500's were all modified fastbacks from the factory. Now people just take the old fastbacks and do their own interpretations just like in Gone in 60 seconds. Eleanor is just an interpretation of the real 500. There is a shop somewhere here in Texas that does nothing but build Eleanors. Just find a fastback and take to them with a big wad of cash and bang you get an Eleanor back.

You can buy them directly from them, no need to source your own (you can if you wish). Cool thing is, they still have sequential serial numbers, a true continuation of the Shelby Stangs.
