Pull out all the related parts from the 01 (clutch and brake pedals, clutch master cylinder, fluid resevoir, shift cables, shifter, console, tranny, axles, wiring harness, ECM), then remove your engine, tranny, and axles from your 00. You'll need to get yourself a set of mounts for the manual tranny, grind off your auto mounts, and weld the new mounts in (or you could cut the ones off the other car, but that would be a major PITA). Once that's done, start installing the parts from the manual into your auto. There's really no "easy" way to do it, there's just one way. The one thing I'll say is that if the 01 has less mileage, you might want to swap the engine as well. It's not going to be any more work, since you'll have the engine out anyway.
